1To make the hibiscus tea, add the petals and thyme into a jug and then pour in the boiling water. Stir in sugar until dissolved. Let it rest for about twenty minutes or until cool.
2Fill a wine a glass a quarter of the way full with the hibiscus tea then add the ginger wine until the glass is half full. Lastly top with some soda water. Repeat with the other glasses.
3To make your glass look fancy, lay a thyme sprig on the top of each glass and drop in some petals.
